Prodotto ottenuto da carni di suini nati e allevati in Italia, fatto artigianalmente come una volta. Si utilizza la pancia del suino, arrotolata e cucita a mano con spago naturale, dopo di che viene avvolta in una corda elastica che la mantiene compatta nella sua forma cilindrica. La stagionatura dura almeno 6 mesi, in ambiente umido per ottenere così un risultato ottimo, caratterizzato da un sapore delicato, leggermente speziato che lascia in bocca un gusto gradevolissimo.
